  1. Prepare 5 of chicken tenderloins (optional).
  2. You need 2 cups of chickpeas dried.
  3. You need 1 of onion diced.
  4. You need 1 8 oz bags of spinach frozen.
  5. You need 1 can of coconut milk.
  6. Prepare 4 of tbl curry paste.
  7. You need 1 of cumin tbl.
  8. It's 1 of coriander tbl.
  9. Prepare 2 of cilantro tbl dried.
  10. You need 2 tsps of salt.
  11. It's of peppercorns cilantro red & fresh for garnish.

Crockpot Chickpea Spinach Curry instructions

  1. Plug in crockpot and set to low heat (cook time 6-8 hrs) or high heat (cook time 3-4 hrs).
  2. In a small bowl mix the coconut milk, curry paste, spices and herbs.
  3. Cut the raw chicken into bite sized pieces.
  4. Add chickpeas to crockpot. Then add chicken and onions.
  5. Pour coconut curry sauce over chicken and onions.
  6. Pour frozen spinach on top.
  7. Cover with lid and let cook for specified time.
  8. Garnish with red peppercorns and fresh cilantro.
  9. Enjoy with rice and or naan!.
