  1. Prepare 300 grams of Smoked sausage, eg. (kielbasa).

  1. Preheat the oven to 220°C . Using a sharp knife cut the sausage diagonally into 1 cm thick slices and the onions into 6 mm thick slices. In a large open roasting pan, toss the sausage, onions, mushrooms, oil, vinegar, rosemary and garlic until well mixed..
  2. Place in the oven and roast the sausage and vegetables for 15 to 20 minutes until they are lightly browned, stirring halfway through the roasting time.
  3. Meanwhile, rinse the rocket leaves and pat them dry. line a serving platter or four individual serving plates with the Rocket. Spoon the sausage and vegetable mixture, with their pan juices, over the the leaves and serve immediately.
